Short on purpose. Whole wings, dry-brined and twice-cooked for the crispiest skin I can manage, with four homemade sauces always served on the side. Every single item on this menu is gluten free, which is not something most trailers can say.
Three whole wings with a sauce on the side. For a smaller appetite, or for the kids.
Six whole wings, dry-brined, oven-cooked and finished in rapeseed oil. Your sauce on the side, so the skin stays crisp all the way to the last one.
Nine whole wings, for when six was never going to be enough. Two sauces on the side.
Same brine, same crisp, no bones. For the people who want to keep their hands clean.
Golden and crisp outside, fluffy in the middle, cooked to order. Try them with one of the sauces.
Crisp outside, salty and soft in the middle. Good on their own or with one of the sauces. Vegetarian.
Cauliflower given the same dry-brine and the same finish, so you get the same crunch and the same four sauces. Plant-based, but cooked in the same oil as the chicken, so not one for vegans.
I am always testing something. A new sauce, a new rub, a new way of doing it. Check the board at the trailer to see what I am up to this week.
A small range of cold cans. Nothing clever, just cold.
Every single thing on this menu is gluten free. The wings are dry-brined rather than floured or battered, the fries and the sauces are gluten free, and nothing containing gluten goes near my fryer. If you have coeliac disease, come and talk to me and I will walk you through exactly how it is cooked. Gluten is not the same as everything else, so full allergen information for every item and every sauce is at the trailer and I am happy to go through it with you. Halloumi fries are vegetarian. Cauliflower wings are plant-based, but they share the fryer with the chicken, so they are not suitable for vegans. Menu may vary by event.
