Not a substitute bun. Not one thing tucked away at the bottom of the board. Everything, every day. It was not really a business decision either. I picked a way of cooking wings that happens not to need flour, and once I had, it seemed daft to ruin it by putting something floured next to it in the fryer. So I did not.
The wings are dry-brined with salt and my own rub, so there is no batter and no coating on them at any point. They are oven-cooked and then finished in rapeseed oil. The fries are plain potato. Every sauce is made by me. The halloumi and the cauliflower are cooked the same way, in the same oil.
Come and talk to me before you order. I will tell you exactly how it is cooked and what has been through the fryer that day. I would far rather spend two minutes on that than have you take a chance on it.
Full allergen information for every item and every sauce is at the trailer and I am happy to go through it with you. The halloumi fries and the cauliflower wings have no meat in them, but both are cooked in the same oil as the chicken, so I do not describe them as vegetarian and they are not suitable for vegans. If you are catering for a group, ask me for the written allergen sheet and I will send it over.
